Chocolate Lava Cake




Nothing say “I love you” better than home baking, so why not throw together a delicious Chocolate Lava Cake this Valentine’s Day. Its luscious pudding-like centre, together with its delectable outer crust make this a dessert worth savouring. It’s also really easy to make!

What will I need?
115g unsalted butter, cubed (plus extra for greasing)
170g god quality dark chocolate, finely chopped
3 eggs, separated
65g granulated white sugar (plus extra for dusting)
1 teaspoon vanilla extract
1 tablespoon granulated white sugar

Let’s get started!

Preheat the oven to gas 6. Grease ramekins with butter and dust with sugar, then place on a baking tray.

Place the butter and chocolate in a heatproof bowl over a saucepan of simmering water and melt. Remove from heat.

Using an electric whisk, beat the egg yolks in a separate bowl with 65g sugar until thick and fluffy. Beat in the vanilla extract and proceed to fold in the melted chocolate mixture.

In another bowl, whip the egg whites until soft peaks form. Gradually add the 1 tablespoon of granulated white sugar and whip until soft peaks form. Using a spatula, gently fold the beaten whites into the chocolate mixture. Be careful not to over mix.

Divide the batter between the prepared moulds and bake for 15 minutes, until the outsides are crispy and the centre lusciously runny.

Remove from oven and place on a plate, along with a scoop of ice cream or freshly whipped cream. Sprinkle with icing sugar and serve immediately.

Makes 4 individual desserts.

You can make them a few hours early; just place the mixture in the moulds, cover with cling film and pop in the fridge. (They may take an extra couple of minutes to cook if the batter is cold.)
